A simple nourishing snack or meal when you want something light. Wraps are great and when you are gluten free and grain free options are small but coconut wraps are a great options. If coconut is not a great option try lettuce or collared greens. If you roast a lot of veggies on the weekend you can have them and these wraps throughout the week. Yay meal prep!

2 bell pepper

I roasted a big batch veggies in the oven
Pre heat your oven to 400º F
Slice your bell pepper and onion
Place bell pepper and onion and asparagus on a baking tray
Drizzle olive oil over all the veggies
Place in the oven for 20-30 minutes
or until veggies are cooked through it depends how thick and close together they are.
Take your wraps and if they feel stiff or not that malleable warm it up in a lightly oiled skillet. Just for a few seconds on each side.
To make eating easier chop up your veggies
Stuff your wrap and eat up!
