I really enjoy winter squash especially baked butternut squash. Why not put them with meatballs which is my go to easy meal prep protein source. This is a big batch so feel free to cut it in half.
Or you can freeze some for latter.
Makes about 30 meatballs
Pre heat oven to 375 F
get out a large baking sheet
Place onions in a skillet and cook with coconut oil or ghee till translucent
Stir in garlic and cook for 2 more minutes
In a large bowl mash up the butternut squash if you need to bake it still click here
It can have some chunks
Add in the ground meat, eggs, and salt
Add in onions and garlic I use a spoon at first till the cold meat cools down the onions
Then I use my hands to make sure its mixed thoroughly
Form meatballs and place on baking sheet, its ok to have them close together
