Cassava Tortillas

May 3, 2019

 Happy Cinco De Mayo!

While I personally have no connection to Mexico or France but, I like tortillas and tacos.

Why not use the excuse to make tacos and enjoy Mexican themed food?

These are pretty simple I have used them in several ways including:

Egg burritos that are small so you get to eat more!

Tacos, traditional and BBQ style

Makes 8-10 tortillas

  • Rolling pin or smooth water bottle

  • Parchment paper

  • Skillet spatula (wider the better)

  • 1 cup cassava

  • 1/4 tsp salt

  • 2 tbsp chia seeds or flax meal

  • 3 tbsp avocado oil

  • 1/2 cup warm water (ish)

  • Mix all dry ingredients(cassava, salt chia or flax)

  • Slowly mix in oil

  • Slowly mix in water you could need more or less water you want the ingredients to stick together but not be sticky

  • Make one large ball then divide it into 8-10 balls (depends how big you want the tortilla)

  • Take 2 sheets of parchment paper place one down on the counter and 1 ball on top

  • Then place the 2nd parchment paper on top

  • Roll out your dough till its thin but not splitting apart

  • Heat up your skillet

  • Add oil for frying(your not on a low fat diet today, ok?)

  • Two ways to put tortilla in the pan with the spatula or

carry it over to the pan on the paper and flip it over on to the pan(both take practice)

  • Cook each side evenly it should be pliable not crispy
