Clean out the Fridge Chili (sweet)

   This is a bean-less veggie loaded meal in one sweet chili.  It is very hardy and easy as long as you have time to

be home. You can do it in a crock pot of you have one that is big enough. I think the stove is better.

     I was cleaning out the fridge before my husband came home with new grocery’s, all ingredients are staples in      our house.  But feel free to use what you have or put what every you like in it. I think bell peppers (red and yellow) would be a great addition to this recipe. This is gluten, grain, nut, dairy, and soy free.  

Remember you have to eat it, so do what you like and have fun experimenting!

 

Serves 8-12

Ingredients:

 

  • 3 lb of ground meat

  • 1 large butternut squash

  • 5 sweet potatoes

  • 1 large onion

  • 5 cloves of garlic

  • 3 golden beets (tops included)

  • 4 celery

  • 5 carrots

  • 2 (10oz) bags of frozen veggies (broccoli & cauliflower)

  • 4 jars of tomato paste(24oz) or 2 cans of diced tomatoes or one of each

  • 2-6 cups of bone broth or broth or add water if you don’t have that much broth

  • 2 tbsp of fat of choice (I used coconut oil)

Spices:

  • 2 tbsp oregano

  • 2 tbsp basil

  • 2 tbsp turmeric

  • 4 tbsp paprika

  • 1 tbsp pepper

  • 1 tbsp salt

  • 1 tsp cumin

  • ½ tsp red chili powder

 

Optional:

 Foods that would also be good additions/substitutions:

 

  • red and yellow bell peppers

  • zucchini

  • kale

  • sausage

  • Avocado for garnish

 

Directions:

  • I chose to slice/dice my sweet potatoes and bake them layered at 400ºF and then add them to the pot last I like the flavor better or you can put them in raw at the beginning.

  • Peel and cube butter nut squash or for faster results use frozen cubed

  • Dice beets

  • Thinly slice celery if you want the celery hatter in your family to not know it’s in there mince it

  • Dice onions

  • Mince garlic

  • Slice carrots

  • Place al of the above in a large pot

  • Pour in tomato’s (paste or diced)

  • Pour in broth

  • Turn on stove to high with lid on and bring to a boil

  • Once boiling turn heat down to a simmer and stir occasionally for about an hour or two veggies should be soft

  • Stir in frozen veggies and beet tops (chopped)

  • brown meat

  • Add in half the spices to the meat and half to the veggies only about a 1 tsp of the salt goes in the meat

  • Stir in meat (juices too)

  • Simmer till meat is fully cooked about 20 minutes

  • Add in potatoes if you chose to bake them
