Garlic Sweet Potato Wedges

          Apparently, I have been eating a lot of garlic lately. It is great for when everyone around you is sick (I work in a hospital). Garlic fries came up in conversation so, I had to give it a go. This was my first attempt and it

actually turned out well! The coconut acts as a thickener and makes the garlic flavor spread out. But, if you can’t do

coconut you can leave it out it will be different and I would add a few more cloves of garlic. You can also add

the salt and pepper after baking. This made a great Saturday snack for my husband and I. If you can have cheese parmasian would be amazing.







  • 4 Sweet potato(or however many feel the tray)

  • 5 garlic cloves

  • 3 tbsp. Shredded coconut

  • 1 tsp Salt

  •  1/4 tsp Pepper

  • Dash of Cayenne

  • ½ tsp Thyme

  • 2 tbsp Tallow (any fat like ghee or coconut oil)

  • ½ cup Hot Water



  • On a large baking tray place a piece of parchment paper

  • Slice sweet potatoes

  • Place on tray, so that they are all touching the tray and not to crowded

  • Mince garlic

  • In a bowl or in a blinder or food processor mix garlic, shredded coconut, salt, pepper, cayenne, thyme, tallow, and water(water is hot so that the fat melts and mixes you can use more or less water depending on how thin you want it)

  • Pour over wedges

  • Bake for 30-40 minutes
