Beet Beef Casserole

Quick and easy meal to throw together. I know it is trick to get food right not with people stocking up and stores not able to keep up. For those of us with a limited diet anyway this is extremely frustrating and worrisome. Personally, it’s hard to find the carbs I usually rely on and you can only buy one carton of eggs at a time. So more frequent trips to the store which defats the point of staying out of public places…Well here is the recipe and it’s easy to switch around what veggies you put in so use what you got.


  • Beet Beef Casserole/ pan meat loaf

  • 2 lb ground Beef

  • 1 lb turkey

  • 3 oz tomato paste

  • 2 eggs

  • 4 carrots

  • 1 beet

  • 2 celery

  • 1 tsp salt

  • 3 tbsp basil

  • dash cayenne



Pre heat oven to 375ºF

  1. In a food processor blend carrots, beet, and celery till they are evenly sized and

  2. In a Pyrex dish mash meat, veggies, salt and spices together till it is mixed evenly

  3. Pat down till it is spread out in dish and flat on top

  4. Bake at 375 ºF for 45- 60 min

  5. Most likely it will be 60 min but check it at 45 min

  6. The casserole will have shrunk and there will be extra liquid which you can drain or keep
