Hailey's Pancakes

These are my favorite pancakes. I never liked pancakes as a kid. Maybe I intuitively knew that gluten was bad for me then. I wasn’t diagnosed with celiac till I was 20. These are delicious to

me now. I like to make breakfast sandwiches out of them and eat them as a snack. They are a

staple in our house. Sometimes I just make a few and leave the batter in the fridge and

make them fresh when I want a few. 





  • 4 eggs

  • 3/4 cup water

  • 1/4 cup flax meal

  • 1/2 tsp salt

  • 1/2 tsp (mounded) cinnamon

  • 1 cup flour mix Red Bobs Mill Gluten free flour mix with garbanzo and Fava beans

  • 1 tbsp of melted fat of your choice



  • Whisk together eggs and water

  • Whisk in Flax, salt, and cinnamon

  • Slowly add in flour mix is tends to get clumpy so be patient and stir a lot

  • Stir in 1 tsp spoon of melted fat

  • Heat up your skillet to medium grease it with your preferred fat

  • Pour about 1/4 cup of batter for each pancake

  • Once there are bubbles coming through the pancake and its easy to slid your spatula under flip it. 

  • It should cook faster on the second side

  • Repeat till all batter is gone
